Ginger marinated mackerel (saba)
Ingredients (for 3 - 4 servings)
- Mackerel 1
Dashi Stock[A] 400mL
- Ginger slices of Ginger Pickled in Honey 20g
Pure Honey Vinegar[A] 100mL
- Carrot 1/3 pieces
Ginger Pickled in Honey[A] 4 tablespoon
- Green onion 1 pieces
Soy sauce[A] 4 tablespoon
- SALT as appropriate
Light-Colored Soy Sauce[A] 2 tablespoon
- Potato starch as appropriate
- Cooking oil as appropriate
- Lemon wedges as appropriate
- White radish sprouts as appropriate
How to make:
1Sprinkle the mackerel with salt and let sit for about 1 hour, then remove bones and cut into 1.5 cm widths along with slits in the skin. Julienne the carrots and thinly slice green onions.
2Place the [A] ingredients into a pot and leave to boil for a while.
3Sprinkle potato starch onto the mackerel of (1) and fry in oil at 180 degrees. While the mackerel is hot, add the carrots, green onions, pickled ginger, and (2).
4Remove from heat and cool in refrigerator for around 2 hours. Serve in a bowl decorated with radish sprouts (if any) and add lemon if desired.
5Key point to remember
By using "Ginger Pickled in Honey," you can make mild ginger vinegar using apple cider vinegar. Mackerel can be refreshed without any odor by sprinkling on salt.
