Ginger-flavored yellowtail zangi
Ingredients (for 2 servings)
- Yellowtail
Four slices (200~250g)
- Frying oil

- [Marinade]Soy sauce

- [Batter for frying]Potato starch
2 tablespoons

How to make:
1Cut the yellowtail into easy-to-eat pieces, sprinkle with salt (not listed in the ingredients), let stand for about 30 minutes, and rinse water.
Wipe off excess water with kitchen towels.
2Put 1 and [Marinade] in a zip-lock bag and mix.
Marinate for about 10 minutes.
3Add the ingredients for [Batter for frying] to a bowl and mix.
4Wipe off the liquid from 2 with kitchen towels and coat with 3.
Fry in oil at 170 degrees until crispy.

Zangi is a local dish of Hokkaido.
By using pickled ginger in the marinade, it is given a refreshing flavor without the bothersome odor of yellowtail.
If the yellowtail is soaked in seasoning for a long time, it will become tough, so keep the marinating time to about 10 minutes.
