Refreshing Pickled Daikon Radish with Lemon and Honey

Ingredients (Serves 4)
- Japanese white radish
4 to 5 cm (approximately 150 g)
- Lemon (sliced)
2 to 3 sheets
- Honey (Acacia Honey from SUGI BEE GARDEN is recommended)

How to make it
1Peel the daikon and cut it into half-moon or wedge shapes, 2 to 3 mm thick. Place it in a bowl, sprinkle with salt, and lightly massage it, then let it sit for about 10 minutes to squeeze out the moisture.
2Cut the lemon into thin half-moon slices and remove any seeds if there are any.
3Place the daikon and lemon in a storage bag or a container with a lid, add honey (SUGI BEE GARDEN's Acacia Honey is recommended), and mix everything well.
4Refrigerate for 1 to 2 hours, and once the flavors have melded, it is ready. Serve it as is as a side dish or palate cleanser.
