Marinated Scallop and Grapefruit Salad
Ingredients (for 2 servings)
- Scallop (sashimi grade)

- Grapefruit

- Pink pepper (or substitute with black pepper if you can't find)

- 【marinade liquid】Olive Oil
2 tablespoon
- 【marinade liquid】Apple Cyder Vinegar
1 tablespoon
- 【marinade liquid】Orange Honey
1 teaspoons
- 【marinade liquid】Grated garlic
1/2 teaspoons
- 【marinade liquid】Salt
1/2 teaspoons
- 【marinade liquid】Black pepper

How to make:
1Mix the [Marinade] ingredients together in a bowl.
2Slice the scallops in half horizontally.
Peel the grapefruit, make shallow cuts in the membrane, and remove the flesh.
3Add 1. and 2. to a bowl and combine gently.
4Arrange the marinated scallops in a serving dish with baby greens and a sprinkle of pink pepper.

You can also use smoked salmon or prosciutto instead of a scallop.
Marinating the scallop for too long may result in it changing color, so be sure to mix in the marinade just before serving.
