Homemade ginger ale syrup made with pickled ginger

Ingredients (for 2 servings)

  • Ginger 200g

    Water 200mL

  • Cinnamon sticks 1 piece

    Black pepper (grains) 5 pieces

  • Ginger Pickled in Honey (including the ginger) 200g

    Lemon & Honey 50g

How to make:

1Wash the ginger properly with a scrubbing brush and cut it thinly into 2mm thick slices with the skin still on.

2Add all of the ingredients into a pot and turn the heat on to medium. Once it boils, turn down the heat to low and simmer for 15 minutes before turning off the heat.

3(2) Strain with a strainer and let it cool.

4Dilute 50ml of homemade ginger ale syrup with 150ml of carbonated water.

※Key point to remember
If you prefer it to be spicy, you can also add chili pepper with the seeds removed at step (2) and simmer.
